Expect the Unexpected

Holy moly.

This last Sunday was insane.

But a good insane...mostly.

It all started when I woke up (doesn't it always?)

My roomies and I (along with some peeps from the ward) went to see Moneyball late Saturday night, so waking up for church at 9am was a little bit rough. But after sluggishly getting ready for church, we were off. Church was great (as usual), but when I came home I really felt like eating something warm to wake me up. Then the thought came to me...why not make homemade tomato soup for dinner?? Fabulous idea, right?

WRONG.

I started by sautéing some onions (which irritated my eyes like crazy and made my eyes water endlessly). After that, I added some herbs and spices before adding a RIDICULOUS amount of chicken broth and whole tomatoes. It was so ridiculous, in fact, that I had to start pouring the ingredients in a different pot because our biggest pot was too small. And you know what that meant? Any time I had to add extra ingredients, I had to pour two MASSIVE pots of hot soup into a giant mixing bowl, mix them, and pour the hot soup back into the two pots. I was so frustrated (if you know me, I hate failing at...well...anything), but I finally got everything ready to simmer for 20 minutes or so.

After letting the soup simmer, the recipe got more difficult. I had to pour the boiling hot soup into a blender and purée everything together (there were whole tomatoes that needed to be blended into the soup). I was extremely careful pouring the soup in, but realized that it would probably take 3 or 4 blenders full of soup to get everything liquified. Ugh. I put the lid on the top, put my hand on the lid, pressed "liquify", and screamed the loudest, most frustrated/terrified scream ever.

Why?

Because this happened.

Except with boiling hot soup. All over my arms, face, kitchen wall, oven, floor, and counters.

So what did I do? Well naturally, I crumpled on the (soup covered) floor and cried. Not because I was scared or in pain (which I was...my arms got burned), but because I was so frustrated with the fact that I couldn't get this recipe down. Pathetic, right? Right. Aubrey was sitting at the kitchen table reading when it happened and laughed hysterically. After the initial shock of the whole thing, I laughed too. But man, I refused to make tomato soup ever again.

After eating some dinner, it was time to get ready for our annual roommate photo shoot! We send out a Christmas card to our friends and family every year, so we needed some pictures for that. We were all really excited because we decided to try going up to Aspen Grove to shoot in the fall colors. Each of us brought our own cameras and we all switched places modeling and photographing. It was a BLAST! And can I just say that I have the most gorgeous roommates in the universe?? Because I do. And I'm so grateful to have them!

Here's a little teaser of our photo session - just a few out of 400. Mind you, I didn't have time to edit them very much but I think they turned out! Let me know what you think!

Yours truly

Gorgeous Erika

Beautiful Erin

Stunning Aubrey

After wrapping up our individual pictures, Aubrey and I decided to plank in the middle of the road. It was so pretty!

But then Erika and Erin screamed "CAARRR!!!" and we freaked out

Love my roomie :)

And I love these roomies too :)

And yes, we're all complete goofballs.

But I think that's why we get along so well :)
